The burner setting is an input, not a temperature. Pan material, pan size, food temperature, and time all change the result. High heat is useful for quickly replacing heat lost when food enters. Low heat buys time for eggs, butter, garlic, and thick sauces. Listen as well as look: a lively sizzle means water is leaving; violent snapping and smoke mean back off.

A browned surface cannot tell you whether a thick piece is cooked inside. The fastest way to learn your stove is to change one variable at a time and notice how quickly the pan recovers.
A cold pan spends its first minutes warming while food leaks water. An overcrowded pan traps that steam. Preheat over moderate heat, add the appropriate fat, then add dry food in one uncrowded layer. “As hot as possible” is bad advice for nonstick coatings and delicate fats; follow the cookware maker's limits.
You add a whole tray of mushrooms or chicken and get grey food simmering in a puddle. Fix it step by step. First, stop adding ingredients. Second, remove half to a plate. Third, let the liquid evaporate from the first batch without constant stirring. Fourth, brown it, remove it, reheat the pan, and cook the second batch. Next time pat the surface dry, preheat, and batch from the start.

Batching takes longer on paper and less time in the actual pan.Salt changes more than saltiness: it suppresses bitterness and makes aromas easier to notice. Season large components while cooking rather than dumping the whole allowance in at the end. Go lightly when stock, cheese, cured meat, soy sauce, or reduction will concentrate later. Taste a spoon containing sauce and solids together; tasting only the liquid lies about the finished bite.

Never pour salt directly over the pan from a large container.Salt early when it has time to distribute, but hold back a final margin. The goal is not a mystical amount. It is a feedback loop small enough that one correction cannot ruin the pot.
A rich or flat dish often needs acid, not more salt. Lemon, vinegar, wine, tomatoes, yogurt, and pickles each bring different flavors as well as acidity. Add a few drops near the end, stir, and taste. If you can name the vinegar before the dish, you probably added too much or chose the wrong one.

Test a spoonful separately before changing the entire pot.Sugar can mask sourness but cannot remove acid. First reserve a portion if possible. Then dilute with unsalted base ingredients. Add fat if the dish welcomes it. Only then use a small amount of sweetness to round the edge. Keep tasting; sweet-and-sour can become two problems instead of one.
Fat transfers heat, dissolves fat-soluble aromas, and changes texture. Choose it for both temperature and flavor. Butter tastes good but its milk solids brown; refined oils tolerate more heat. An emulsion suspends droplets of one liquid in another. It needs small additions, agitation, and often an emulsifier such as mustard, egg yolk, or starch.
A pan sauce or vinaigrette separates into an oil slick and thin liquid. First, take it off aggressive heat. Second, put a teaspoon of mustard or a spoonful of the watery phase in a clean bowl. Third, whisk in the broken sauce a little at a time. For a butter sauce, whisk in a spoonful of cool water, then add cool butter gradually over low or no heat. If it splits again, the sauce is too hot or fat is entering too quickly.

Dry the ingredient, give it room, and let one side stay in contact with the pan. Stir when the surface has actually colored, not because standing still feels irresponsible.
For better browning:

□ Deglaze the brown fond; discard truly black, bitter residue.The exact symptom is acrid, bitter garlic with dark brown flecks. Do not bury it under tomatoes and hope. First, remove the pan from heat. Second, discard the burnt garlic and wipe out black fragments; burnt flavor does not reverse. Third, cool the pan briefly. Fourth, restart fresh garlic over lower heat for thirty to sixty seconds, then add liquid or the next ingredient as soon as it smells fragrant. Garlic often belongs late, not beside onions for their full ten-minute cook.
Time is an estimate. Thickness, starting temperature, equipment, and evaporation change it. For thick food, check the center with a clean instant-read thermometer inserted away from bone and the pan. Many foods continue rising after removal because hotter outer layers transfer heat inward. Resting also lets temperature even out.
DONENESS CHECK
1. Use appearance and texture as early clues.

3. Take more than one reading on irregular pieces.

Before adding anything, stop and identify whether the problem is concentration, balance, texture, or burnt material. Make the smallest test in a spoon or bowl. Some failures are reversible; burnt garlic and badly scorched sauce are not. Moving good food away from the burnt layer is a repair. Scraping the bottom is sabotage.
TOO SALTY
1. Stop reducing. 2. Remove salty solids if practical.
3. Dilute with unsalted base. 4. Rebalance acid and fat after dilution.
Potato does not selectively “pull out” salt.
TOO ACIDIC

BURNT BOTTOM
1. Stop stirring. 2. Pour the unburnt top into a clean pan.
3. Do not scrape. 4. Taste before deciding whether to continue.Adding raw potato to an oversalted soup mostly adds potato and dilution; it is not a salt magnet. The dependable repair is more unsalted food or less salty liquid. Be willing to serve a smaller, corrected batch instead of doubling every ingredient blindly.
When a dish drifts, run this list before reaching for another ingredient.
HEAT Dial is input; watch the pan. Lower it before burning.
SPACE Dry food, preheated pan, one uncrowded layer.
SALT Season lightly in stages; account for salty ingredients.
ACID Add drops to a test spoon; acid sharpens rich or flat food.

Three warnings:
Grey puddle in pan → less food, more recovery heat, cook in batches.
Bitter dark garlic → discard and restart cooler; do not disguise it.
